Where is the notification email box for admin?????

Hi,
I mean, when I open Order status menu to edit, It brings the following fields.

Title *
Stock Movements
User Group Change
Reward Points Change (Needed)
Reward Points Change (Received)
Download
Email Subject (Customer)
Email (Customer)
Email Text (Customer)

However, don't display Email (Others) and thus I can't list customers email address. what is the reason if it may need some other configuration to display it.
