I wish to set the store to use only one currency Australian Dollars AUD.
I can see where to setup the currency but cannot see how to set as default. If I remove EUR I get error messages regarding missing currency.
Is it as simple as modifying EUR to AUD and changing the symbol?

Hi, remove the EUR and add AUD (or just change the EUR to AUD). The default currency is the one which has the currence exchange rate set to 1:
