After a little more digging I found a thread explaining the import process
Now to get to work.

Re: CSV Structure for import into CArt 3.5
What are the import rules
Will a new import with the same ID number overwrite the existing record?
I have added some new data to the original import and wanted to update all records based on ID number, is this possible or should I empty the products file and start again?
Thanks

Hi, current data will be overwritten, so if the import csv do not include all the information about a product, the product will be overwritten by data which are set in csv.
