How can I customize the order form by entering, for example, the unit of measure for the item; it is clear that buying 1 loaf or 1 kg of bread is not the same thing.

currently not possible to calculate price based on user input..
you have to define the options you want to offer in attributes or advanced stock management.
then the user can select the weight.
on the feature list there is a calculation based on user input.
