N00B in need of some help

hello,
ammod here, first of all thanks for great website software, secondly i'm really n00b and know nothing about php, so this is gonna make some of you grind your teeth at me, and thats fine
i have just setup a new website, recently...i did have someone who did all my updates and such, but he and i have parted ways, what i need to know is how do i update my joomla software on my server and still retain my site, in it's current state with settings and such

is there a plain english tutorial on this, sorry i didnt know where to post this...

also is there a plugin that i can install, that will give me "language options" becuase my target site isfor a german gaming community, i'm english but dont speak a word of german

any and all advice will be greatly appreciated
