dinner menu for one season

Hi,
How can I create a menu like Dinner Menu, not for always but for a few weeks only, for example during the winter season. Is it possible to copy the Dinner Menu or should I use the Bill of Fare and make a list for Winter menu?
Maybe I can link a Joomla menu item to Bill of Fare - Wintermenu only?
If I use that solution, won't I lose one level in the menu system, for example:
Normal Bill of Fare:
Lists - Groups - Posts
If I use my solution, then I have left only:
Groups and Posts
Correct?
