you can change font colors, background color, border colors in default settings (parameters component in menu link)...

If you want to change others, you must change the css

If you want to change TinyMCE field, you must take a look at TinyMCE in Joomla code, Phoca Guestbook only use this Javascript editor...

But i can't put another inputbox there instead of the TinyMCE field?

No, 'width' you can edit in:

components\com_phocaguestbook\helpers\phocaguestbook.php

and there you can change the attributes of TinyMCE editor (more functions...)
