Modify Order Confirmation Email

Hello! Just up and running with version 3.5.2 and received our first order. Noticed it is missing the customer phone number(s) and email address for our fulfillment folks. What is the best way to add these fields? I found the field code names in the documentation, but I'm not sure where to put them. Do I need to build a new form altogether in each of the "Order Statuses" or do I just add them to the footer for instance? Also noticed that the address is not displayed the way we do in NA (postal code should go after city). Thanks for your help.
