Email dates in billing different to order dates

My customers have to enter dates in the billing form as I can't get the attributes to work properly for some reason yet. I have a separate post here for that.
So the order has a date showing Flight Date IN : 2023-10-05 00:00:00
Yet the emailed date is 2023-10-04
And you can't pick the time. So this looks like a bug. No one else uses dates I am guessing so this may have never come up.

Hi, do you get this for all the orders? Maybe there is some specific settings on handling dates on your server.
Testing now, everything is OK.
I don't know exactly what flight date means? Is this order date?

Hi Jan, its a date picker that I added to shipping fields as it is the best way to get a flight date from a customer. This is for booking taxi. Thanks for testing further.

Thank you that seems to add part of a solution I need. But the dates not coming out as expected or picked is very strange.
I don't really want to get this information at billing either but the attributes settings per product don't work or I need a setup guide.
